VIX restaurant’s Executive Chef Vincent Muraco is launching a 6-course wine dinner series starting Wednesday, September 26, paired with wines from France and Italy. The menus feature dishes such as Florida spiny lobster, grilled artichoke with blood orange, fennel salad; Summer truffle risotto, braised oxtail, crisp parmesan with baby arugula; Pipette of watermelon juice, diced strawberry with 25-year balsamic; Center cut “natural” filet of beef, olive oil smashed Peruvian purple potatoes, porcini mushrooms, cipollini onions with beef jus; and Tiramisu with chocolate-espresso biscotti, amaretto panna cotta and mascarpone ice cream. VIX will also extend its $35 Miami spice menu prepared by executive chef Vincent Muraco to October with selections such as Ceviches served with tostones and citrus and ginger marinated grouper and spicy prawn with Spanish olives and olive oil; Crispy soft-shell crab tempura with buckwheat soba noodles, tomato-tamarind sauce and coriander; Herb marinated and grilled “line caught” swordfish with heirloom tomatoes and citrus-fennel salad; Argentinean mixed grill: skirt steak, short ribs and chorizo with house chimichurri; and an India/Middle Eastern choice of three curries: chicken makhani, cilantro leaves and ginger; Sri Lankan chicken, coconut and cashews; Goa shrimp, coconut milk and chilies, Lamb korma, almonds and tomatoes, with spinach paneer, basmati rice and pickles.
