Classes with instructor Lourdes Castro, THE Biltmore’s chefs: Philippe Ruiz, Roly Cruz-Taura, Chef Mario Camia and pastry Chef Olivier Rodriguez range from beginners through advanced cooks focus on skill-building, proper technique and seasonal ingredients. All classes are hands-on, so students truly learn through participation. Cost: Hands-on Class $110 per 3-hour class limited to 8 students.

At these interactive cooking sessions, Chef Cindy Hutson shares the secrets of her Cuisine of the Sun. Guests are teamed up in groups of 6 with a chef from Cindy’s kitchen at each table to guide them through their lesson and are taught the art of pairing wine and food. Everyone will take home a goodie bag along with a recipe booklet of what they prepared that day.

In each class, Chef Clay Conley will share his cooking tips and prepare the ultimate gourmet lunch along with student chefs in the magnificent marble-clad open kitchen of Azul. A sumptuous three-course tasting menu is matched with flights of premium wines by sommelier Cynthia Betancourt.  Student chefs will receive recipe cards and cooking notes for easy step-by-step reference. Upon completion of the class, graduates will receive a certificate of participation and a signature Azul apron.
Classes are held Saturdays from 9:30 a.m. to 1 p.m.

 Chef Jorgensen offers cooking secrets and recipes basic cooking techniques – from sautéing to blanching – as well as advanced tricks of the trade during two hour Saturday cooking class, held in the restaurant’s elegant, private wine room and cooking classroom.
