WINE SERIES AT EOS RESTAURANT, THE VICEROY MIAMI, DOWNTOWN MIAMI
Sergio Caceres, wine director of the brand new EOS restaurant at the Hotel Viceroy Miami is launching a Wine Series – formal dinners and tastings - where world renowned winemakers and vintners will present their wines.
The first wine maker dinner which took place on Tuesday June 23 from 7 to 9 p.m., was hosted by winemaker Peter Figge of Figge Cellars winery, who produces old-world style wines in Monterey County, California, a few miles off the Pacific Ocean on the south facing hills of Carmel Valley to the remote Canyon of Arroyo Seco and on the hillside slopes of the Santa Lucia Highlands.

KAREEM ZARWI BEVERAGE MANAGER/CHIEF SOMMELIER AU PIED DE COCHON, SOUTH BEACH
27-year old New York-born Kareem Zarwi – a Second-Level Certified Sommelier Court of Master Sommeliers, formerly Wine director at La Cofradia in Coral Gables who honed his skills as a bartender a The River Oyster Bar, Downtown Miami – is now beverage manager and chief sommelier for Au Pied de Cochon, a new French brasseries in South Beach.
His cocktail recipes have been published in Food Arts magazine, on the cover of Plate magazine and in Food & Wine’s 2008 cocktail book.
At au Pied de Cochon, the focus of the list is French and Zarwi’s wine list includes 575 selections “which we will bring up to about 900 by the end of the year,” he said. According to him, “approximately 40% of the list is French, primarily Burgundy, Bordeaux and Champagne but also including the Rhône, Alsace, the Loire and smaller appellations. We have selections from all over the world- from California to New Zealand, Lebanon, South America, Australia, Oregon, Washington and other regions to provide guests with what they may be looking for and enjoy most - as well as selecting wines that pair well with Chef Didier's food.
The by-the-glass program offers 19 current selections including Dom Perignon ($38), Joseph Drouhin Savigny-Les-Beaune Red Burgundy ($16), Louis Latour Chablis Les Chenfleur ($10), Domaine des la Pepiere Muscadet ($7), Chateau de la Gardine Chateauneuf-du-Pape ($14), Chateau Simard 1998 St.-Emilion ($14), Newton Claret ($10).
