After the recent departure of the Sean Bernal- Kevin Amiott team The Oceanaire Seafood Room in Miami has appointed Jorge Morgado to General Manager/Operating Partner and Kareem Anguin to Executive Chef.  In their respective new roles, Morgado will oversee the day to day operations and management for the upscale seafood eatery and Kareem Anguin will oversee the restaurant’s kitchen staff and daily culinary preparation of sustainable seafood delicacies.

Born and raised in Portugal, Morgado was formerly the wine director for The Oceanaire.  With a career that spans more than two decades of restaurant and hospitality management experience, Morgado has worked at Norman Van Aken’s ‘A Mano’ Restaurant, The Newsroom, China Grill Café, Baleen’s, Tantra Restaurant and Lounge, and Barton G. 

Hailing from Jamaica, Anguin is a graduate from the Johnson and Wales University culinary arts program.  Prior to joining The Oceanaire in 2005, Anguin honed his culinary craft at the J. W. Marriott hotel in Miami and worked with chef Bernal at Pescado Restaurant in Coral Gables.

vino e olio chef_andrea_menichetti_in_the_kitchen_4Tuscany is undergoing a food renaissance; its local products lovingly grown and manufactured by artisans proud of their land.  And Chef Andrea Menichetti  ­­— the son of Maurizio Menichetti, a sommelier and vineyard owner and chef Valeria Piccini , owners of the two Michelin stars rated Da Caino restaurant in the Maremma, the coast of Tuscany —  intends to bring to Miami "produce, cheeses, and meats that come from small local producers in Tuscany", as well as wines from his father's vineyard.

Together with restaurateur Alessandro Cecconi, they are opening Vino E Olio in October, a sleek 220-seat restaurant with glass lit walls casting colors in all directions in the dining room and a stunning outdoor terrace.  The  menu  based on rustic Tuscan cuisine includes Chef Andrea’s signature dishes:  Tortelli Cacio e Pere, or pasta stuffed with sheep cheese and pears; and, for dessert, almond cannoli with chocolate mousse and Grand Marnier cream.

Miss Yip Chinese Café and Javier E Rabinovich, owner of The Prive Group are opening a second, 4,000 square-foot location on 900 Biscayne Blvd, a residential tower in Downtown Miami — the first location is on Lincoln Road in South Beach.  The menu is traditional Hong Kong fare presented in a modern way with a Dim Sum cooking area and new bar/lounge addition with outdoor terrace area.

Maria Tobar is now  Executive Chef of  the 296-room JW Marriott Hotel Miami on Brickell Avenue. Chef Tobar will spearhead culinary operations for the hotel’s restaurants, including the award-winning Trapiche Room, as well as banquet operations and in-room dining.  

A native of Ecuador, Chef Tobar began her culinary career at age 17, working as her father’s assistant at a small catering company in San Miguel de Ibarra. In 1996, she opened her own restaurant, La Casa del Chef, a traditional Ecuadorian restaurant in Quito. After earning her degree in Hospitality Management from Pontificia Universidad Católica del Ecuador (PUCE-I) in 1999, she was given the opportunity to work at Bistro Latino, a five-star restaurant at the JW Marriott Hotel Quito. She moved to Miami five years later.

Ms. Tobar joined the JW Marriott Hotel Miami in 2004 as a line cook and quickly rose through the ranks, working her way to Kitchen Supervisor, Sous Chef, Head Chef and most recently Executive Chef.  “She is a seasoned veteran of the culinary industry, and has a wealth of hospitality experience and genuine passion for food,” said Florencia Rotemberg, the hotel general manager.

The 2400-sq-ft Havana’s Cuban Cuisine - part of Michael J. Mellion’s family of restaurants including Barrio Latino in Aventura, and Barrio Latino, Coral Gables (opening fall 2010) - is the only full service Cuban restaurant in the Cooper City/Davie area.

The menu is Latin fare with traditional Cuban, Argentinean and Mexican influences. Appetizers range from $2.95 to $12.95, soups and salads from $3.95 to $8.95, and entrees from $8.95 to $19.95. Argentine Grill items, such as the Argentine Churrasco (skirt steak), range from $12.95 to $14.95. Other menu highlights are traditional Cuban cuisine such as Ropa Vieja, Bistec de Palomilla, black beans and rice as well as several Mexican favorites. At his death, Mr. Batterberry was the editor in chief of Food Arts, an influential trade magazine for the restaurant and hotel industry. In May, he and his wife, the Food Arts’s publisher, were honored with the James Beard Foundation lifetime achievement award for their contributions to the American culinary scene.

frankandrea curto randazzoThe Water Club's 27,500 square-foot location where the old Miami Shooters used to be, at 3969 N.E. 163 St., North Miami Beach, has undergone a multi-million dollar refurbishing to become an all-day, all-night, year-round destination. The elegant 500-seat indoor/outdoor restaurant  offers a 15,000 square-foot waterfront pool deck and patio, 500 feet of dock space accommodating up to 50 boats with a full-time dock-master, and a swimming pool with a sun deck. All that in addition to a temperature-controlled Wine Room housing 2,000 labels where GM Louie Spetrini plans to conduct winemakers dinners and tastings.

Chefs Andrea Curto-Randazzo and Frank Randazzo, owners of Talula Restaurant in South Beach and Creative Tastes Catering & Event Production in Kendall, are on-deck as Executive Chefs & Directors of Food & Catering Operations.

The reasonably-priced vast and varied menu meant to be served family-style includes plenty of seafood - raw bar, oyster bar as well as crispy fried oysters ($11.95) ; steamed Top Neck clams and Prince Edward mussles ($11.95), Manhattan clam chowder (7.95); Salads, sandwiches and burgers ($10 to $12); among the entrees from the Water, Land and Earth (all under $20)  there's  Yellowtail snapper with pearl couscous studded with toasted almonds and Spanish olives; bucatini Pescatore; coconut curry chicken ($13.95) over jasmine rice. A casual and affordable bistro at lunchtime Bistro e becomes the sophisticated Eos restaurant at night.  The farm-to-table menu printed bistro-style on a paper placemat is filled with beautifully plated options ranging from the e³  daily special “$15 on 15th” - a three-course menu du jour selection for “$15   including a pint of beer and an hourglass on the table, to a list  beginning with snacks ($5 to $6) and abundant starters ($ 8 to $9) that could very well pass as main dishes, like the heirloom tomato salad with feta cheese;  the scrumptious white asparagus salad with wild mushrooms, pecorino Romano and a truffled fried egg; an amazing meatball parmigiano slider with fontina cheese on a brioche bun or the Bloody e-Mary black grouper ceviche.

More Than a Snack ($13 to $18) lists grilled San Marzano tomato, mozzarella and basil pizza, 4-cheese ravioli, a huge bowl of spicy Korean BBQ prawns with soba noodle. The inevitable grilled chicken salad here comes with heirloom tomatoes, string beans, mozzarella and olives. The grilled BLT and the Turkey sandwich are not your usual lunchtime quickie. There’s short-rib tostada, pork belly tacos and an ; sandwiches, salads and burgers ($14 - 18), simple chicken with summer vegetables ($14) and a delicious grilled branzino served in an oven-to-table casserole with roasted fingerling potatoes, cherry tomatoes, olives… The e Burger comes with mushrooms, gruyère and  gruyère, caramelized onions and garlic.
Composed dishes or specials (from $16 - 22) includes Linguine with Clams in garlic white wine sauce,  Hanger Steak with crispy potatoes, charred tomatoes, black beans and queso blanco. Then there’s Michael’s lamb burger with Amarillo peppers, feta puree and smashed potatoes and red snapper “plaki” with zucchini, onions, tomatoes and garlic in white wine sauce.
As for beverages, in case you have to get back to work, there is lychee lemonade, ginger hibiscus tea, soda floats, smoothies, shakes and specialty juices ($5 to $8).

Chef Bernie Matz who brought with freshness and high-quality Latin comfort food dining to the Café at Books & Books on Lincoln Road has just opened Bernie’s L.A. Café, a 30-seat restaurant with a counter and  wine racks lining the red walls, where The Spot used to be.
 
The  Pan-Latin menu lists small plates and dishes prepared with  all-natural ingredients:  organic mixed greens, organic tofu, free range chicken breast, beef with no antibiotics or hormones, and wild-caught fish. There are tapas, burgers, seafood cocktails, salads and healthy traditional favorites like Cuban sandwiches a la plancha, tacos, quesadillas,  Havana cheese steak, ceviches like the grouper ceviche with celery and grapefruit, fajita wraps as well as a list of combined vegetarian,  meat and fish entrees.  Also on the menu: $9 daily specials such as Bernie’s arroz con pollo and ox tail stew or grilled flank steak fajita in a whole-wheat tortilla with grilled onions, roasted red peppers, and avocado salsa come with a side of white rice, black beans, and maduros.  All items are offered for take-out or delivery.

il mercato 2 “Eat Global, Dine Local all at reasonable prices” is the message that Il Mercato Café & Wine Shop, a 60-seat indoor/outdoor eatery which just opened in a terra cotta tiled, brick walled space at 1454 E. Hallandale Beach Blvd., is sharing with its guests.  “Il Mercato is designed for anyone who really loves wine and food,” says the restaurant’s owner, sommelier, and general manager Michael Lynch .
 
Executive Chef Emily Finne Lynch, formerly of   Table 8 and Manhattan’s Eleven Madison,  has created a menu with health-conscious components that reflect her personality and complement the restaurant’s carefully chosen wines selection.   “We believe in eating healthy  as much we enjoy indulging in a wonderfully rich and indulgent food,” says Chef Emily who is a supporter of the Slow Food movement.

Pastas include Fusilli with red chili, broccolini and grana padano cheese ($6/10); Spaghetti with pancetta, shallots, fava beans, egg yolk and parmesan ($7/11); Homemade Papardelle with Bolognese style ragu sauce ($8/12); Spaghetti with clams, dry vermouth, olive oil, lemon and herbs, ($8/15); Homemade tagliatelle with garlic, cream, cognac and 4 cheeses ($7/12).
 
Main plates include Half chicken semi-boneless, spaetzle, zucchini and Riesling jus ($15); Grilled hangar steak, cottage fries, herb butter, charred salad   ($10/$19); Seared Filet Mignon with roesti potatoes and green peppercorn Roquefort sauce ($12/$23); Pan seared salmon, herbed barley, scallions, shiitake soy butter  ($8/$16); Grilled Mahi with minted pea mash, fennel salad, orange reduction ($9/$17).  Il Mercato offers lunch daily, Sunday brunch, house-made gelato (by Chef Emily’s father Michele D’Antoni), $15 Prix Fixe Dinners and  $8 “Panini of the Day”.
 
Starters range from steamed clams to braised pork belly, Arancini to jerk duck leg confit and more ($8 to $10). Salads include five very different offerings from a Barley, shiitake, goat cheese, tomato, scallion, sherry vin ($7) to a basic Mixed ($6). There is also an antipasto platter for two ($16) and sides ($4-$5) such as Rosemary potatoes; Peas and hominy; broccolini, spaetzle; and grilled veggies.
